I’m adjusting the original 0SP pancake recipe, that I posted on January 1st, now that we’ve had some time to make sure tweaks for the better!
Start your day off right with this delicious take on pancakes that will not give you a carb overload like their traditional brethren.
1 Banana 2 Eggs 1/2 tsp Pumpkin Pie Spice 1 tsp Vanilla Extract 1/4 tsp Baking Powder Pinch Salt
Mash the banana then add the rest of the ingredients and mix well (yolks broken). Wait for at least five minutes for the powder to work a little magic while the griddle/pan is heating up.
Ladle on hot griddle (greased with Pam/other cooking spray if necessary) and cook as you would regular pancakes. You may not get as many little bubbles like you do with regular pancakes so watch the color carefully. Low and slow tends to work better (try a heat setting of 4/10 maybe).
Top with fresh fruit (0SP), some re-hydrated PB2 (varies), SF syrup (varies) or other low point option and these truly are delicious. Enjoy!
